I am planning a trip to Paris next month. My tentative plan is 2 days in Paris, take the train to Tours and stay the night in Amboise, leave the next day for Aix en Provence for 2 days, train to Nice for 1 night, and fast train back to Paris the next day. Am I trying to do too much? I am taking my college age daughter and want to show her some different areas in France.

Yes, you're trying to do too much. While there are small, single towns in Europe that you can see pretty well with a one-night stay, two nights in Amboise would make it more comfortable to have a full day for a van tour or other transport between a few different chateaux. And you'd barely see Nice, not to mention any coastal towns around it. At the very least, I'd give the Nice night to Amboise. I'm certainly also in the camp that spends a whole week in Paris, or would suggest Paris + 1 other stop.
From Amboise to Aix, most trains are routed via Paris, with a change of stations in the city, but the 14:30 TGV departure from St. Pierre-des Corps to Marseille would be the easiest way to avoid that. The trip takes 6 hours, either way. The same train would also arrive to Avignon 45 minutes sooner.
Thanks. I thought it was probably too much. So, now the question is, do we nix the Loire Valley, and go directly to Provence, or nix the French Riviera? I have spent a lot of time in Paris, and want to show my daughter other parts of France. We just have a week though unfortunately.
How about this.
Fly in, Train to Beaune, 2 nights Beaune
Train to Arles, 2 nights Arles
Train to Paris, 3 Nights Paris
Alternatively, you could fly into Lyon or Marseilles and out of Paris an save yourself some travel time. Beaune and Arles are fine to do without a car. I wouldn't want to do the Loire without a car. Beaune in Burgundy is quintessential French countryside and Arles the most interesting town in Provence where you don't need a car. That's 3 distinctly different places and a pretty diverse portfolio.
If the seven days are your whole trip, I would say, pick Paris plus one other destination, period. If that other is Nice, fly home from Nice.
My own pick would be Provence, but that's just me.
You can squeeze in more, but you won't have a better trip by doing that.

You say that you have 7 days, does that mean 8 nights or 7 nights?
Has your daughter been to Paris?
If not, I'd suggest Paris (4 N) & Loire Valley (3N) OR Paris (3-4N) and Provence (3-4N).
