I have continuing education in Chartres that begins on Sat. July 2 but would like to visit Provence before. We will be flying in on Monday, June 27. Any suggestions?

Where are you flying into? Paris CDG?
If so, your best bet is to take a train either from CDG airport (more convenient, but fewer options) or from Paris Gare de Lyon, to Avignon TGV. Then, base yourself in Avignon if you are using public transport - or you can rent a car, but for please keep the drive as short as possible after such a long, tiring journey.
For the return journey: take the train back to Paris Gare de Lyon, take the metro or a taxi (recommended, it's much faster) to Paris Montparnasse, then one of the hourly-or-so trains to Chartres.
You do not need to book the train from Paris to Chartres in advance, but you do for the other journeys - sales typically open around 4 months in advance.
