The direct train journey from Gare Saint-Lazare to Bayeux takes just over two hours. It is operated by the Nomad regional network; tickets can be booked on the SNCF or Nomad websites.
As mentioned, no trains directly from CDG to Bayeux. The trains from Gare Saint-Lazare are basically commuter trains. No TGV, no need for advance tickets. You will likely be able to make a noontime train, but again, no need to buy advance tickets. Just show up when you can get there and buy a ticket for the next train.
If it were me, and particularly if I had luggage, I would simply take an official, fixed rate taxi from CDG to Gare Saint-Lazare (only from the line outside, not from anyone soliciting you inside the airport). This is what I do all the time. Easy-peasy!
What Pharmer Phil just described is what my husband and I did. We also had the SNCF connect app on our phones so we just bought the tickets at the train station on our phone after we arrived via taxi and got on the train.
