We will be concluding our tour in Nice in late September, and we are looking for the easiest way to travel to Paris to catch a flight back to the U.S. We have set aside a generous budget for this trip; therefore, we are looking for the quickest and easiest solution. We are thinking that travel by bus or by train might be the simplest way as it would avoid the hassle and uncertainty of domestic air travel. We would be departing from Nice on a Friday and would like to book a flight from Paris to the U.S. the next day (Saturday).
I would not discount taking a flight from Nice to CDG. It would be the quickest and easiest. Train travel also has its uncertainties.
I did a quick Google search and found:
Air France and Easy Jet fly Nice to CDG. With Easy Jet be sure to check their baggage/weight rules.
From Nice to Orly there are Easy Jet, Transavia and La Compagnie. Check baggage weight on these last two as well. If you went to Orly you could spend the night before your CDG flight in Paris. All the flights from Nice to CDG or Orly take less than two hours.
Do heed the advice to be in Paris or a CDG hotel the night before your flight to the US. If it is a morning flight I would stay at an airport hotel. If in the afternoon you could spend a last night in Paris and take the RER train or a fixed-price taxi to CDG before your flight.
Do check with the various airlines regarding their baggage rules. Easy to find online at the airlines' websites.

When we did the France My Way Tour last September, it ended in Nice. We spent an extra night in Nice and then flew on Air France from Nice to CDG and then on to SEA and home. It's a short flight and we had ample time to make our connecting flight. There were a lot of early morning flights out of Nice to Paris, but we chose the 11:05 am flight, so we wouldn't feel rushed.
It sounds like you haven't booked your flights yet. Why not book a multicity ticket into Paris and out of Nice? The return trip may well require a connection, but your connecting flight would be protected by being on a single ticket. Meaning if a late arrival caused you to miss the connection, the airline would be responsible for getting you on the next available flight. Google Flights will show what options are available for your destination city and date. Of course if you have a different reason for spending your last night in Paris, then disregard.
The Sky Team companies, Delta, Air France, KLM, can give you the connecting flight on one itinerary.
It would be Nice-Paris-USA or Nice-Amsterdam-USA. If Delta still has flights from Nice it would be Nice to theUSA, probably JFK in NY, and then on to your Home airport.
To answer your question, the fastest and most reliable is Air France from Nice to CDG airport. You can fly later in the day and stay at an airport hotel. The most convenient would be the Sheraton because it’s right inside terminal 2, walking distance to check in for the transatlantic flight.
You can have direct flight from Nice (seaonal) in September from Boston, Atlanta and JFK (Delta), Philadelphia (American), United (Newark, Washington) and Montreal with connecting service onward. La Compagnie, an all business class carrier, flies to Newark (now year-round) but does not have automatic connections in the US. An open jaw won't necessarily be more expensive, and I've often found it to be less expensive You can also connect via any the other European hubs as well, and sometimes that is lower cost or have better availability/schedules than even going through CDG.
I agree with the comments about booking a multi-city ticket, which is what we do on all of our trips.
This year we are flying into Paris, then going straight to Normandy driving for eleven days, then Paris and Dijon by train for another six. We have visited Paris multiple times.
Finally we are catching the train from Dijon to Nice, a long journey but we love trains.
We are flying home to Australia from Nice, there is no point returning to Paris in our opinion.
We have taken the train from Nice to Paris and also flown from Nice to Paris on another occasion. The easiest and fastest way is clearly flying. we flew Air France. The train is nice, great scenery, but it eats up a lot of time out of your trip.
Thanks to all for the suggestions, and I agree that flying out of Nice would likely be our best choice. I failed to mention we will be flying American Airlines. It has been pointed out we can fly AA Nice to Philadelphia direct, and then on to our final destination Dallas-Fort Worth (DFW).
American has direct flights Nice to Philly thru at least 1st week in October
