What is the best method of travel between CDG airport and Bayeux. Landing in CDG at 7:30AM. Also, if I were to take a train, how long would it take to get to the train station by cab.
Can't answer the "best method" question, but can provide one datum point on transfer time: Hit arrival gate at CDG on a Monday last September at about 07:00, and was headed to the taxi rank by about 07:30. Took us just shy of two hours from getting in the cab at CDG to arrival at Gare St. Lazare. Stop-and-go traffic most of the way, more stop than go. Bought tickets at the station and jumped on the next train to Bayeux, which left at 10:10. YMMV.
The method I'd probably use.....
- RER "B" from CDG to Chatelet Les Halles, walk to Chatelet (that's a fairly large "super transfer station" but everything is well marked so you shouldn't have any trouble finding your way).
- Transfer to Metro Line 14 (direction St. Lazare) and you'll be at the station in a few minutes.
I don't know what the traffic will be like at that time of the morning, but using the RER and Metro will avoid any traffic issues.
Check the bahn.de website for details on trains from Gare St. Lazare to Bayeux. There are fairly frequent departures, with some trains being direct and others changing in Caen.
Your question is answered in this link, particularly Ed's response on taking the RER B to Gare du Nord and transferring to the RER E. You can avoid Chatelet on this route, which is preferable.
Try the RATP route planner for the local transportation. If you are physically able, you should avoid taking a taxi into the city during rush hour, as Eric points out. Even taking the Roissybus would avoid having to pay a mounting taxi fare while stuck in traffic. The Air France bus doesn't go near the Gare St. Larzare.
Ed will also tell you that you can rent a car at CDG and be in Bayeux before the train even leaves the St. Lazare Station. Sounds pretty good to me. Check out the time, cost and mileage on viamichelin.com.
I'd go with what Bets said for the following reasons (in order of importance):

I've decided to throw out my old metro map that did not show RER E in existence. Luckily, current RS books are up-to-date. Don't pre-purchase your train ticket; buy it on the spot when you arrive at St. Lazare.
I agree that you should avoid Chatelet Les Halles to transfer. But the RER/Metro transportation option works very well to catch the train to Caen/Bayeux.
Thank you for all your advise. It appears using a cab, a travel agent's suggestion, would not be the best method at our arrival time of the day. If understand correctly, it could take two hours to get to the St. Lazare Train Station by cab. If we take the RER, as suggest, will it be possible to maneuver with rolling carry on's?

Yes, you can take rolling luggage onto the RER, as long as you can lift it two or three steps. I've seen people do that often. You will likely also have to navigate some stairways in the stations.
