I plan to travel from Monaco to Paris. The local train from Monaco departs at 642 arriving in Nice at 704am. The TGV that I need to connect to departs at 734am. Firstly how tricky in Monaco station to find the correct platform i.e how soon should I get there? Secondly is 30 minutes enough time to locate and get on the train to Paris?

Well I don't know any disabilities or other difficulties you may have but most people would have no trouble with those times.
Monaco is a very easy station with several entrances depending on where in Monaco or Beausoleil you will be entering from. There are screens all over the station which will show both which platform the train will be in on and what delay they might be. There are escalators down to the platforms. I'd want to be there 5 minutes early, you might be happier with 10 or 15.
Nice is easy, all the platforms are parallel to each other and all are connected by tunnels. I'd be happy with a nice easy 10 or 15 minute connection. With 30 minutes you can go into the station and get a coffee.
