Is it better to book train tickets from Lyon to Paris before I leave the U.S. or should we just wait until we get there? Not sleeper reservations. High speed would be nice.

If you book when you arrive you will pay more for tickets.. tickets bought in advance can often be had for discount price ( often listed as a PREM rate.. on sncf) . You can of course by day of.. I have not heard of them ever being sold out. Will check rates.. when is trip?

Better to buy ahead for TGV/high speed trains. Capitaine Train site works well for U.S.
