Two possible departure stations from Paris:
1/ Paris Montparnasse station : with two connections: first in Toulouse, second in Carcassonne
2/ Paris Gare de Lyon station: with two connections: first in Lyon, second in Carcassonne
Travel times are roughly the same for both (approximately 6 hours 30 minutes).

Route 2 is a bit more scenic than route 1 IMO.
