Couldn't go directly there from Trenitalia, and wasn't sure what station to use to then switch to a train to Nice

Have a look at trains on the DB website for more info on the train you are travelling on.
Dependent on the train you catch, some terminate at Ventimiglia in Italy and you change trains there.
Other trains stop in Ventimiglia but without a need for a train change and just continue on to Nice.
Go for the second option if you can

As mentioned, the last rail station at the border is Ventimiglia. Depending on which trains you choose, you may have to change trains there, or you may be shuttled right through to Nice.
