Do you have a recommendation for a charming stop en route for a couple days that would be easily accessible from the train station?

Every stop that train makes is an interesting city. Montpellier is in the middle of the run, and the station for that route is in the middle of the city.
If you make a stop in Montepellier, or Nimes you can also take the RENFE train. They go to Lyon and Marseilles, and have multiple stops en route as well./

Since you'd need two tickets, the first from Paris would be a SNCF. But in the south RENF, the Spanish rail company is running trains on the same track, too. The two companies are competing, so some prices are competitive.
Exactly, you are not limited to the towns where the direct Paris-Barcelona trains stop. Renfe has trains from Marseille and Lyon to Barcelona that give you many more options. And Lyon is not a bad place to spend a few days. You can also consider Avignon or Aix-en-Provence.
