My husband and I want to visit the Moet champagne cellar in Epernay while we are in Paris. Is it necessary or advantageous to buy the day trip train tickets in advance, or would we be just fine buying them when we get to Paris? Same question for the cellars - necessary to book time slot in advance or fine to buy when we get to the cellars?

The direct train from Paris to Epernay is a TER train so there is no advantage cost wise if you buy early. The advantage would be avoiding the lines, if there are any, at the station on the day of travel or the day of purchase.
