Train tickets from CDG to Bayeux - Sat. Oct 29

We (2 adults) will be flying into CDG this Saturday at 9:30am. I thought I would buy our train tickets once we arrived to make sure there were no delays, but am now wondering if I made a mistake by waiting. I see on the Rail Europe website there is a direct train from Paris St Lazare to Bayeux at 1:10.

I'm assuming the price will continue to go up if I wait to purchase after we get there. Is it possible the train will be full and there will be no other tickets available once we arrive?

What would be the best option to get from CDG to St Lazare?

Too late, all discount tickets are gone and the only thing left is full fare tickets for 40.30 EUR, unless you want to wait until 7:10 pm.
Take the RER B to Gare du Nord, then change to the RER E to Gare St Lazare. 10 EUR per person.

Or you can take a taxi from CDG to Gare St. Lazare for 50 euros. It is possible but highly unlikely that the train will be sold out. As said above, the price will not change. It's not that the prices go up as the travel date approaches. It is that there are lower priced tickets with reduced flexibility for exchanges etc. and those sell out leaving only the higher priced tickets. In your case all of the lower price tickets have been purchased except for on the 19:10 train.

To get the deep discounts or even the moderately priced tickets you need to do it months to weeks in advance. Once those tickets are gone then the standard fare applies. We paid 15 Euro but the we got the tickets 3 most out. A few days won't make a difference; prices don't rise beyond the standard full fare.
