Going to Bordeaux in December. Best to go by plane or train from CDG?
Also best area to stay in Bordeaux?

Definitely train. There's direct trains from CDG to Bordeaux and they range in time from 3-4 hours travel time. Messing around with flights at CDG means you'll need to be there at least two hours in advance, then flight time, then getting out of the airport and getting to Bordeaux itself, so there's at least three hours right there.
I don't know about where to stay, however.

I'd recommend finding lodgings in the area near the Quinconces and the Grand-Théâtre. That's where the action is, and the Quinconces is the epicenter of public transit for the city.
The area near the Cité du Vin is also great.
If you are flying in to zCDG on Air France, Delta, or KLM the change to an interior Air France flight is seamless if both flights are on the same itinerary.
If a different airline is involved, the train might be easier.
