Trying to book train tickets but not sure where to book from n Paris. The options are Paris, Paris Nord, Paris Est etc. I show we need to leave from Gare de I’est. Is that the one listed as Paris? Thanks for the help.
It is listed as Paris Est, or Paris East, or Gare de l'Est. All the same place.

I would use db.com if you want to do this on-line booking in English.
For Frankfurt Hbf, you are departing from Paris Est , ie, Gare de l' Est. The ICE or TGV connection Paris to Frankfurt is direct, which train it is, ICE or TGV , depends on the time of the departure.
Given a choice I usually take the ICE since the reservation is not mandatory.
When you indicate your destination is Frankfurt/Main or Frankfurt Hbf, the departure automatically switches to Paris Est, after which select the time of departure from Paris Est..
I don't know where you are trying to book tickets, but use www.bahn.de and look for tickets from Paris to Frankfurt. If you just select Paris it will show you trains from Paris no matter what station the train uses. Which is useful. Although you really don't have a choice, trains to Frankfurt leave from Gare de l'Est.
Avoid third party ticket sites if you can, and definitely don't try to buy train tickets from db.com!
When you book trains to and from Paris, you just put in 'Paris' and the sites will assign the correct station. Different stations serve different routes; you rarely have a choice of the Paris station.
