I am due to arrive at CDG via Air France on Wednesday 7/27 at 11:10 am. I plan to take a train to Riquewihr or Colmar, if necessary.
Would anyone be willing to assist me in selecting the best train route?

You can go directly to Strasbourg from CDG or you can go to Colmar with changes. Riquewihr has no train station. There are occasionally direct change from Paris Est to Colmar but most require a change.
Use trainline.eu to plan routes. You can then book with them or SNCF.

7/27 is a Saturday, not a Wednesday. You will want to allow a few hours leeway for possible delays in arrival, passport control, or baggage claim, if you are planning on buying your ticket in advance. Otherwise, buy your ticket on arrival for the next train going to Colmar, then a bus to Riquewihr. Once you arrive at Colmar station you need the departmental bus (branded "Fluo") route 16, final destination Ribeauville. On the 17th July, buses leave Colmar railway station at 11:10, 12:10, 14:10, 17:10, 18:10 and 19:10. The website for the buses is at https://services.fluo.grandest.fr but it is not very easy to use if you don't read French.
