We will be heading from Camogli, to the south of France, where would be the best place to get a car rentals once we cross the border?
Will be staying in Antibes, followed by Provence, and dropping off in Toulouse.

I would rent a car in Antibes itself. There are several shops at/near the station. You might not need it right away, since it is often more convenient to explore the coast around Nice without a car (the trains are very frequent on the coastal line).
You may find a broader choice of vehicles by getting off at the St. Augustin Nice stop and taking the (free at that point, I believe) tram from Grand Arenas to Terminal 2 and Parking P5, where the rental car center is located. However, check prices as well compared to Antibes..
