How complicated would it be to take a train from Bayeux to Paris, the CDG airport. Does this involve changing trains, or taking the Metro from the train station to CDG?
Yes it does. Again, you will arrive at Gare St Lazare and have transfer to a station that serves CDG. That ticket, costs 11.40 EUR and is valid from anywhere in Paris to CDG. So buy a ticket and take the RER E to Gare du Nord and change to the RER B train to CDG.
A simpler option I usually take is to walk 8 minutes from Gare Saint Lazare to the Opera Garnier. From there, there is a Roissybus that goes direct to CDG. No Metro, no RER, no stairs, and you get to see Paris on your way out rather than hiding underground from her. I believe that bus leaves every 15 minutes or so, and costs 12€ per person.
Your suggestions sounds interesting - has anyone else had experience with the Roissybus in front of the Opera Garner to CDG. Would I pay the fare in euros as I board the bus, or is there a machine somewhere to purchase the ticket? How long is the trip to CDG?
Thanks for this suggestion - it would be fun to take a stroll and see a bit of Paris instead of remaining on a train or Metro. Is this a safe area for a woman traveling solo to walk?

Last August I did the CDG to Gare du Nord to St. Lazare to get to Bayeux.
Gare du Nord is HUGE and the signage was poor, and even though I've used the Metro for years with no problems, this one got me confused.
