Toulouse or Brussels for a free day of touring

I have a business trip in October that will take me to Toulouse and Brussels. I have not been to either and would love some seasoned advice on the following question: If I have the luxury to build in a totally free day at one of these locations (or at day trip from either), what would you recommend? I've been to Paris and could do that again, but I'd prefer something new. I like real experiences - local food (but not necessarily 'fine dining), landscape photography, historical sites, hiking and sometimes just wandering around and soaking up the culture. Any advice?

I think Brussels would probably have more to offer for a day, although I personally would probably choose Toulouse.
Hiking and landscape photography in either place will be urban, though if weather permits you might get out of Brussels pretty easily on a bicycle.

Toulouse, la ville rose. You'll have the southern light and climat in a very old city and southwestern French cuisine. Read wikitravel for details on the two cities.
