Since you haven't mentioned a budget, here are a couple of recommendations in the 3 and 4-star range:

The Grand Hotel de l'Opéra and the Ibis Styles are both conveniently located overlooking the Place du Capitole (the main tourist spot of Toulouse)

For a more intimate experience, I suggest the "Hotel Croix Baragnon", situated in a quieter, pleasant neighborhood while still being close to the center.

I would suggest avoiding hotels near the Matabiau train station.

The options around Place Wilson, like the Novotel and the Mercure, tend to be quite impersonal and not worth the price IMO.

If you’re planning to visit Toulouse, you won’t need a car anyway.

We stayed at the Hotel du Grand Balcon, which is super central. I would stay there again and happy to recommend it. Enjoy your trip!
