Does anyone have a recommendation for a hotel in Toulouse? I have a one night stop here as I will be flying out early the next morning. My ideal hotel would be near the center of town, easy to find, and with easy parking. Since the airport is 15 minutes away, I prefer to stay in town instead of near the airport. Any advice on hotels or airport logistics would be appreciated.

We've been looking at hotels in the city center of Toulouse for a 3 night stay with an early flight at the end of our stay. Our criteria was city center, walkable to public transportation, air conditioning, reviews, street view of surrounding area and price. After considering the Appart Hotel Clement Ader, Novotel, Mercure and the Crown Plaza we settled on the Crown Plaza. We are there over a long weekend in August and the price for all of these 4-5* hotels was about $100 USD per night for 2.
Edit: I just read your easy parking requirement and while I think all of these hotels offer parking it may not be easy and probably costs something. Couldn't you drop your rental car at the airport the day you arrive and take very convenient public transportation or a 15 minute taxi ride to your hotel and avoid parking a car in the city for one night?

I can also vouch for the Crowne Plaza and it is ideally located. At the end of the same trip I spent one night in Abert 1er which is a block away from Place du Capitole - it was charming and a nicer small hotel - it's the one I'll go back to.
I agree with Mona to drop the car at the airport if you can but if not there is parking underneath Place du Capitole as I recall (I didn't have a car during either stay)
