Bonjour from the Carcassonne train station. We spent 4 nights in Toulouse and 2 in Carcassonne, and loved both places we stayed. In Toulouse I highly recommend Hotel Grand Balcony, right off the Capitole. Very comfortable, clean, and central. While it's on a busy street our room was silent thanks to the double windows. We enjoyed a delicious dinner at Molette, where the desserts (eclair and profiteroles) were beyond fabulous. In Carcassonne we stayed at Maison du Canal Midi, a small and lovely B&B with just 3 rooms. It's a 5 minute walk from the train station, across the street from the canal. Run by Katie (British) and Olivier (French) who are the consummate hosts. Delicious breakfasts!

Well done! Molette is an excellent restaurant that I recommend from time to time.
The same owners also run the restaurant just across the street, "Faim d'ours," which is also very good.
