We are taking the 9 a.m. Eurostar to London and already have our tickets. I was thinking that arriving at the station by 7:30 a.m. would allow enough time for 3 of us to get through the customs/security and still get on the train with time to spare. Is this enough time or should we arrive earlier and if so, how much earlier than planned? Thanks!

The current recommendation for check in for Eurostars from Paris to London is 75-90 minutes (standard ticket).

The PDF of your ticket has the recommendation of how far ahead you should arrive at the station.
