I'm trying to purchase a roundtrip ticket from Paris-Vernon through SNCF for Sunday, July 12. The only thing that comes up is a 3 hour journey for over 50 euros?

Use the SNCF - French train app. Depart Lazar station Paris to Vernon/GIVERNY. Many trains often, 40 minutes +/-. Make sure you have the right day, but there are FREQUENT trains.
I'm seeing the usual frequent trains during the preceding week days, but none on Sunday the 12th. The most likely reason is that they have scheduled work on the lines over the weekend.
When we were in France two years ago there were frequent scheduled train construction issues on several weekends throughout the summer. My understanding is they scheduled work on weekends so commuters could still get into Paris and home during the week. There weren’t any trains at all the day we wanted to go to Monet Garden so we had to use Paris City Vision tours To get us there. More expensive than if we had done it all on our own, but It worked out for us.
Construction on the line. I can understand the need to do it on the weekend but to do it on the weekend before Bastille Day just boggles my mind. I guess I am just really pissed as this is the very first summer I am traveling in over 60 years and I've been to Giverny multiple times but never in the summer, and no train!
