Have you looked at RS France book? We are going to Colmar this fall. His France book has a lot of information including an Old Town Walk. We are also planning on daytrips using his Alsace Route du Vin. This is a 90 mile tour of vineyards and quaint villages. You could take a daytrip to Strasbourg, info in his book. Our plan is to drive the Black Forest as well. Information for that driving tour is in his Germany tour book. There is also good information on this website RS here
Enjoy your trip!

The RS France Guide is good and so is the Michelin Green Guide Alsace Lorraine Champagne, which is more narrowly focused on that area of France. I love the Michelin guides for planning my sightseeing. Definitely do a walking tour, either guided or self-guided, it's fun to wander along the canals. Don't miss the Unterlinden museum. If you enjoy wine, then do the Alsace wine route from Colmar, either with your own car or with a guided tour - check with the TI or online for info. A day trip to Strasbourg is good if you're not already going there.

One day in Colmar
One day in Strasbourg (short train ride). You'll pass through on your way from Paris, maybe you can catch it on the way to Colmar if you get an early enough train.
One day take a bus to Riquewihr, (via Hunawihr, tiny but very pretty), then onto Ribeauville. If you are up for it, there is a nice and not overly strenuous hike from Riquewihr to Ribeauville.
If you like hiking, this area is rife with great walks. From Riquewihr there are two main trails to Kaysersberg, a very pretty village.
To the south by bus is Eguisheim, another famous wine village.
The villages I mentioned are easily reached by bus apart from Kaysersberg, as far as I can tell. Bergheim can also be reached by bus: I loved it but it may not be for everyone, it's not as tourist oriented as the big four.

This area is much better with a car.

The wine route between Colmar and Strasbourg is full of very scenic towns. The villages I had highlighted were (south to north) Eguisheim, Turckheim, Kaysersberg, Riquewihr, Hunawihr, Ribeauville, Bergheim, Anlau, Mittelbergheim, Barr and Obernai. Once on the ground I found the towns to be a little like churches, they are all beautiful and each has it's specific charm but one can only absorb so much. I visited about half of these and decided I was finished.

There are also a number of castles and castle ruins in the area. I visited Haut-Koenigsbourg. It's a nice castle to visit. There's a park with barbary apes called monkey mountain, or something like that. It didn't appeal to me so I didn't visit.

You will also want to visit Strasbourg.

Rick has a self-guided walking tour of Colmar in his book, so does Michelin Green Guide - they're pretty much the same walk/sights.

I hate to admit I missed the Unterlinden Museum. I planned it for Tuesday, thinking it would likely be closed on Monday (I arrived in the afternoon Sunday). It was closed on Tuesday and I left early Wednesday morning.

The Unterlinden Museum is very good. You can also spend about a full day just walking all the streets of historic Colmar. At least I managed to do that. There are 30-minute boat rides available, which I missed because I decided to take a side-trip to the untouristy town of Selestat.
