We'll be in Amboise for 6 nights in July, and will cycle, canoe on the river, and see the town. Are there off the beaten track things to do, or places to visit that aren't in the guidebooks? Thanks in advance!

6 nights in Amboise is a good amount of time. Hopefully you will have a rental car. You can walk the town in 30 minutes. Consider the suggested driving routes found in the Michelin Green Guide for the Châteaux de la Loire. I found them to be very useful.

Something I have never had time to do, but could be very interesting, is visiting the troglodyte caves in the Loire Valley.

I'm not sure if this quite counts as off the beaten track, but we did a hot air balloon ride from Amboise at sunset which I really enjoyed.
