I will be returning to Paris (my 3rd time) and staying near the Eiffel Tower. I am arriving in Paris via Eurostar and have no problems or questions about that transit. I need a taxi from my hotel to CDG airport for my departure to Ireland.
My question is this- My hotel is a 15-20 minute walk to any taxi stands and the hotel doesn't do taxi recommendations. Yes they can call one for me that morning but I'd rather have a taxi booked to arrive at a set time to take me to CDG airport. So far I've seen Welcome Pickups, Paris Cab Sarl , Private Paris Cabs.. I am aware of the prices up to 90 euro. Does anyone have a great taxi company that they have used? Also, I don't do Uber.

Download the G7 app to your phone. I've used it extensively in Paris and it is always reliable. There is a 7€ charge for a reservation. And for a return trip to Paris, book your taxi 2 days ahead. One day is often not enough time. Be on the curb 5 minutes ahead, and your taxi will likely be there. The fixed rate will be 65€ plus the reservation fee.
I have a traveling friend who had a credit to use from WelcomePickups and she used it for her return trip to CDG ahead of my return. They showed up on time and helped her with luggage. I have no idea of their rates or reliabliity other than that one anecdote.
I have used welcome pickups in Paris, Rome, Athens , and in Sicily and will continue to do so. I found them efficient, on time, great cars, water available , courteous, etc..You book on the App and prepay by CC.
As noted above, use G7, and reserve yourself -- either via the app or their English-speaking line -- a couple of days ahead.
The cost will be 72€ - the fixed rate of 65€ plus the 7€ réservation fee.

Call G7 on their English speaking line 2 days before your flight. Taxi stands unless you are near a busy one like Bastille rarely have cabs in my experience and you don't want to be trying to call a cab the morning of your flight -- sometimes there are not cabs available for an airport run. This is high stakes; you want it nailed down.
We stay in apartments and have done this many many times. The number for g7 from a US phone (like your cell phone with a US plan) is: +33 1 41 27 66 99. You can also book on line. There is a fixed price for the cab plus 7 Euro to book ahead which you should do. The fare from the left bank is 65 for up to 4 people and their luggage. 5.50 for each additional passenger up to 7. From the right bank it is 56.
I don't know how you assure someone else doesn't grab your cab but I assume they do a name check. You could ask when you book.
Just to add....It is my understanding that the official taxis (G7) can make use of the bus lanes, whereas other car services (e.g. Uber, Welcome Pickups) cannot. This would probably save time on the drive if there is a lot of traffic.
I always use Welcome Pickups for the hotel to CDG connection in Paris. Excellent and reliable service.
From CDG to hotel, I always take an official Paris taxi from the queue.
I also vote for G7, booking via the app. I stay in the Rue Cler area and there is a taxi stand at La Tour-Maubourg Metro station. I have looked the last few times I was in Paris and there were no taxis there at 6A when I would need to leave for the airport. I would not want to depend on hailing a cab at that hour unless you were at a train station.
I'll add that I usually book a 6A taxi for a 10-ish flight departure. They invariably are 5-10 minutes early so I say goodbye to the night staff and wait on the sidewalk by 10 of.
