My wife and I are departing CDG around the same time...I am heading home and she is heading to Croatia. When booking a taxi, do we just let dispatch know we need to go to 2 different terminals? I'm guessing there will be an up-charge for two drop off locations?

Which 2 terminals? My first solution would to drop us both at my wife's terminal, then I would take the CDGval train to my terminal.
I fly out from terminal 1 and my wife is terminal 2.
Much simpler for both to descend at terminal 2, make sure your wife is taken care of then take the free rail shuttle, CDGVAL, to terminal 1.
Or maybe in reverse if you need to be at the airport earlier for a Canada-bound flight (vs. her intra-European flight).

My wife’s plane departs 55 minutes prior to my flight. So going to terminal 2 and then taking the CDG train to terminal 1 should work out fine.
