Would most taxi drivers at an official Paris CDG Airport taxi stand be willing to take a fare to Giverny? If so, would they give a price estimate before departing? Given the long distance, I am wondering if finding a willing taxi driver for this route would be difficult?
I am aware that Uber is also an option. We arrive CDG in late afternoon, so it looks like the train option would require spending a night in Paris hotel before leaving the next day.
My uninformed guess would be no, most taxi drivers would not be willing to drive 200km roundtrip at a moments notice.

How "late" are you arriving? Do you want to go to the village of Giverny or to Monet's house & garden?
Stay the first night in Paris. You will not get to the gardens before closing that first day, and you will probably be tired after your flight. Next day take the train to Giverny. A one-way taxi of that distance is not a reasonable ask of a taxi driver. Where are you going after Monet's house and gardens? Back to Paris?
In a rental car crisis we (4) took a taxi from Giverney to CDG in May. Fare was 340 Euro (plus tip). Received basically no support from car rental company for non starting vehicle. Still trading emails.
Download the G7 Paris taxi app. It’s user friendly and convenient. Like the uber app you can play around with it now to see general costs but don’t click the final submit. If you like what you see you could prearrange the ride on the app.

In answer to the questions posed, we arrive CDG at about 2:00pm and will then need to clear passport control. We plan to spend three nights in a B&B in Giverny at start of trip. After that we will travel by train to Brittany and then back to Paris at end of trip, although plans are still flexible. I will check out the G7 app for pricing of taxi and then make a decision on transport to Giverny.

The last train to Vernon, the Giverny station, leaves at 10:15 pm (22:15) , so you wouldn’t be too late to take a train. You could take a taxi to the Saint Lazare station in Paris and the train to Giverny.
