I am flying on Wednesday from Chicago to Paris and will be staying in Montreuil Ile-de-France. After an eight-hour flight, I will be too tired to figure out the metro system. How much should I expect to pay for a taxi from Charles de Gaulle Airport to Montreuil?

My guess is between 30€ and 40€ but I have no idea what traffic will be like and because this destination is not in Paris, you do not have the benefit of a fixed fare.

Flat fares only apply to destinations in Paris city limits.
Between 10 AM-5 PM, I agree with the above estimate; perhaps closer to 40€.
Before 10 AM, in the AM rush, closer to 50, or 60€ if unlucky with traffic, sounds more realistic. PM rush can also have some traffic, but with a flight from the US I don't think you will hit it.
