Suggestions for 6 hours in Biarritz

Hi,
I am scheduled to fly into Biarritz in early May before taking a bus St. John Pied-de-Port to start the Camino de Santiago.

My flight from Dublin lands in Biarritz at 3:15pm.

I thought I would spend the rest of the day and the evening there before going to St. John the next morning.
Any suggestions on how to best sightsee the six or so hours I will have there.

You can spend some time walking around the town. I was unlucky and had a very rainy partial day there, and I was not impressed. However, I did enjoy the Musee Asiatica, a private museum with a nice collection of Asian decorative art.

I much preferred Bayonne, but I haven't checked transportation schedules to see whether spending the night there, rather than in Biarritz, would be practical in your situation. Bayonne has a good Musee Basque and a chocolate museum that had a generous tasting room as of 2019. The historic center is rather large, extending over both sides of the River Nive.

I assume some others here have been happier with Biarritz than I was and can give you some good suggestions.

I believe Rick covers the French Basque Country in his guide to Spain, which I'd think would be useful to you at other points of your journey.

We spent about 5 hours there in October (driving from Bordeaux to San Sebastian). We walked around town, the beach and had a leisurely lunch next to the sea. It was beautiful and relaxing. It sounds like you are spending the night in Biarritz so you could just enjoy your evening by walking along the boardwalk and town, picking a place that looks good for dinner and relax after your flight.
