Just fyi, September is about the most expensive month for hotels in Paris. It is fashion month and there are many conventions in town that month as well. Rooms are at a premium. What are you thinking of as moderately priced? Can you give a dollar or euro amount you are thinking of?
Re Notre Dame, the cathedral has a website with times, etc of various services. Are you thinking of mass or something else?
Reims...are you going directly there after arriving at CDG to spend a night or two there, before staying in Paris? Or are you planning on staying in Paris then going to Reims for a day trip during that time?

We didn't end up staying here because we were with family and had more complex room needs, but I had looked at Hotel Bonaparte in the 6th near the Jardin de Luxembourg and really liked it.
I am going the end of Sept and I have been shocked at the prices for some of my "regular" hotels. You might look at Hotel Muguet in the 7th. I love this hotel, the staff, the location. It was the most reasonable of my group of 3 or 4 I normally stay at.
I last stayed at Muguet October 2024 and will stay there again this Sept/Oct.
I also like Relais Bosquet which is nearby. A good friend likes Hotel Cadran on the same street as Bosquet. One of my regular hotels is not one I would recommend for a first-timer although RS tours stay there. It is in desperate need of a top to bottom Reno so there are carpet bleach marks, etc. It is clean, just not as nice as you'd want for a 1st time experience. I haven't checked at Hotel l'Empereur this trip although I've stayed there before (not since Covid) to see what their prices are.
A taxi from CDG is good for this neighborhood in the 7th as it's not as easy to get to via the RER B train line into town.
Impossible to make meaningful hotel suggestions, particularly for September, without budget guidance, per night, in euros.
We liked Hotel du Champ de Mars in the 7th, off rue Cler.
My husband, our adult daughter, and myself will stay in Paris 2 nights prior to meeting our biking trip group at Reims train station on Tuesday 16 Sept.
We are happy with clean hotel with comfortable beds/rooms and do not need 4 or 5 star service. I guess I am not familiar with what we should expect to pay for a room for 3 adults and obviously will be at the mercy of the seasonal rates....is 200-300 euro possible?
We certainly are open to suggestions for a different area to stay for 2 nights to see top sights. THANK YOU all.
Hotel suggests for 3 certainly add to the difficulty of finding an appropriate place to stay. As has been said, September is peak season in Paris and it is a good idea to start early.
These are places that have rooms for 3 people. I should think that 250€ to 300€ will be sufficient as a place to start looking and you want to consider hotels outside the 6/7th arrondissements. Prices will be higher for 3 and during September.

Checking these should give you an idea of what is available and the general cost for September.
Two of my older grandkids (age 15 and 11) and I stayed at the Hotel Left Bank in St. Germain in the 6th arrondissement, and really liked our stay there (we had a triple room). It was a wonderful location; only about a 10 minute walk to Notre Dame and a 5 minute walk to Pont Neuf, and there were dozens of small cafes, boulangeries, patisseries and other wonderful shops in the neighborhood. The room was very clean and spacious, and the service was great. There is a lift (small but will fit 2 people) and they also have A/C.
We paid €300 per night for a triple. https://www.hotelleftbank.com/en/ One thing I liked was that there was two single beds side by side, but the third bed was in its own separate area that could be closed off with a curtain. This gave my grandson some privacy.
