Next Monday we will be driving from Fontainbleu to Amboise with our 3 children (ages 6, 9 and 11). I would appreciate suggestions for any interesting stops along the way.

It is a maximum 2.5 hour drive, so you could easily just "power through".
If you are happy to make a full day out of it, then you could go to Guédelon (castle built in the 21st century, with medieval techniques), but it would add 2 hours to the total driving time, so it's not exactly "on the way". Have a look, and decide!

I did think about Chambord, but assumed it would be on your list of visits from Amboise.
If not, then it is really a perfect stop between Fontainebleau and Amboise (more efficient than visiting from Amboise).
Chambord id about half way. There are many acres of grounds, you can hire bikes and electric boats. Excellent for restless kids
I would suggest this place since it's near Fontainebleau....Barbizon, went there once but the chateau happened to be closed...disappointing.
I support the suggestion of Guédelon. It’s a serious detour but think the most memorable experience you can have for the whole family. Or Château de Vaux-le-Vicomte north of Fontainebleau, it needs lesser driving time (1 hour total) but one of the most beautiful châteaux of France.
Think Amboise will be the base for more châteaux, so there is the risk that sooner or later it will be too much if you add the forementioned to your bucket list. Most of the time visiting France include a visit to a château, but speaking for myself 3 of them each time is the limit for me.
