"Best Way?", not sure. However, I did have a very positive stay at the Citizen M hotel. It was a short walk across a plaza from the terminal. Has modern vibe/design. The price was fairly reasonable. They do have a restaurant/bar with limited menu, but the entire airport is just next door if you desire something else to eat. I would stay there again prior to a flight if needed.
IMO, best way is to have dinner in Paris before heading to your airport hotel if at all possible. Pickings are slim for dining around CDG

The best way to enjoy the evening is to stay in Paris, probably somewhere near the RER B; Les Halls for example, from where you can easily go to CDG in the morning.

If you are in the mood for fine dining but don't want to travel all the way to Paris, getting a cab/Uber to the Auberge des Saints Pères in Aulnay sous Bois is far from the worst thing you could do!
