I planning a trip to Provence for April 2023 (8 months from now) and trying to base in St Remy but most sites are saying unavailable. Are hotels not taking reservations this far out or are they really that popular that they are sold out 8 months in advance?

You’re too early. I might start no sooner than 5 to 6 months in advance.

I am seeing plenty of availability on booking.com at the moment.
If you are travelling on Easter weekend, I would book early, especially since it coincides with the Feria in Arles. Otherwise, you can wait and see.

I think what has been said here is generally true but I just reserved a week ago at Maison de Line in St Remy for June 9, 10 and 11 and got the last room. Yet other dates are open March through June and beyond
