For my 3rd trip to paris I had decided to book a dinner at Spring -with all its wonderful reviews. I was disappointed today when I went to make my reservation, that it is closing. I'm glad I do have a reservation at La borse et la vie (same owners/chef). You snooze you loose! sue

They were accepting reservations as recently as 2 weeks ago...

Interesting article, Kim. I had no idea that Spring had been around since 2006. I like this question, and the response from Daniel Rose:
It’s an interesting question: How long is any given restaurant really supposed to last?
"It’s supposed to last as long as you can keep it excellent. I think that I’d much rather close a restaurant before it becomes an afterthought."
