South of France for Christmas?

My son is studying abroad in Paris. We are planning to join him with his brother for the Christmas holiday. We thought the south of France would be nice for Christmas and then return to Paris for New Year's Eve.
I would like to stay in a smaller town where there is some activity but, it it would nice to have it small enough to walk most places. We are looking at Aix, Collioure and places like that. We will need a larger apartment or home. All my men are over 6'3". My sons are 20 and 22 and my husband is a reluctant traveller. I am a chef and will enjoy cooking in the home. I have looked at VRBO, Tripadvisor and Air B and B.
My thought is to take the train from city center of Paris to wherever we chose to stay. Then rent a car to sight see.
This is our first trip to Europe so, EVERYTHING is overwhelming at this point. I would appreciate any information. I have been reading a lot but, would love some personal thoughts.

One more suggestion: if you google "gites de France" several websites pop up for vacation rentals in France, some sorted by region.

VRBO and Gite.com are good places to start for places to stay. As for things to see and do, it depends on what you are interested in. Beaches will be too cold that time of year. However, the small hill towns in the Luberon and Provence would be a great use of time, especially if you have a car. Towns like Gigondas, Vaison La Romaine, and Abbey Senanque are good options.

Yes, Aix would be a fantastic choice for you and your family. Easy to get to by train from Paris on the TGV. Very lively all year long and the Cours Mirabeau lit up at night for Xmas is magical. With a car you can do some visiting in the countryside without a problem and Marseille is an easy train ride.

Only bit of caution - make sure your rental has a decent parking solution for you. Parking on the street in the historical center of Aix is nearly impossible. And given that you should certainly look for a rental in the center of town (much more charming and more interesting to "live" in the center) ask your rental owner what the parking situation is like.

Hi pamsavage

I suggest you think about heading for the Alpes Maritimes coast, somewhere like Nice or Cannes. I say that as they are very pleasant at Christmas and in this area we tend not to get the cold wind which can be a problem in winter in Provence. The Christmas market in Nice is very good.
