Small Village in around the French Pyrenees

Hello, I am traveling in late August early September to France. I have really enjoyed time in Provence but, I am thinking of going over to the Pyrenees. Ideally, I would like to find a small town or village and bike or take car trips to the surrounding areas. I love to cook and will be looking for a house where I can walk to shops and bakeries.
I will most likely fly into Toulouse. I would love any advice.

Might be challenging to find a place that holds your attention for a longer stay. We were in Foix for 2 days and it was fine. The Grotte de Niaux is not to be missed.

Many years ago, I stayed in Montséret. Very small town & no real sites but very real French town with slow life feel & beautiful area to explore. There are a few vacation rentals but no hotels that I am aware of. If you want to immerse yourself, it could be a nice spot.
