What's the best way to do sightseeing in Paris in may ?
The best way is in an air conditioned limousine with a handsome driver/guide at the wheel. Failing that, get a good Paris guide book, conclude what you want to see and use the good metro/bus system to do so.

I may be looking for something more vintage, I've heard about Paris Authentic, they make 2cv Paris Tour but I'm afraid it may be too cold in such an old car.
I doubt it would be too cold in May, but in any case, the 2CV can be enclosed. Used to own one which was kept for us in the UK. by my sister-in-law, for our annual visits.

Decide where you want to go; note the metro stop; go there. Walk between places that are near each other.

On foot mostly and the occasional metro you will see more detail that way especially the boulangerie and patisserie shop windows than from a moving vehicle. It is one of the great walking cities.
We did a late April/early May trip to Paris in 2015. We had warm days and cold days (eg coldest day was a rainy one in the low 50s). My parents did a snowy and cold March trip last year. Both trips were all done with metro and walking + train for day trips. It’s honestly the easiest and cheapest way to go. We never felt the need to use a taxi. The lines go everywhere, though it might take a transfer or two to get to your destination based on your location.
I would stick by the metro and then plan on walking. It’s the best way to explore a pretty walkable city. I would have wanted to get out too many places on a car tour. Just prepare yourself that some days you might be in t shirts and they next you might be a jacket and sweater .
