We will be in Paris first week of February and wondering which company is the best for a seine river cruise. Maybe even a dinner or champagne cruise. Any suggestions?

I agree with David about dinner cruises -- the food isn't that great and you're busy eating it instead of looking at the scenery. Champagne doesn't distract as much visually though. ;-)
People here seem to prefer Vedettes du Pont Neuf, and we enjoyed their cruise years ago. But I think their decks are open, and others glass-enclosed (e.g. Bateaux-Mouches). Since you won't have to reserve ahead, at least for a cruise without food or drink, why not wait till you get there to decide? Look for a day that isn't rainy or too cold, and a boat that suits you. You'll see the boats with their company names going up and down the river, and pick one you like.
There's also the Batobus, basically a passenger ferry that plies the same route for lower cost. But there's no narration and they're less comfortable than the higher-priced lines. For your first time the narration is probably worth it.
One can do anything with a glass of Champagne in one's hands.
