4 of us would like to cruise the Seine. I like the idea of Vedettes open ticket but I’m wondering about the “subject to availability” part. There are We’d like to do this Saturday June 28 around 8:00 pm. Likely a busy time? What is the likelihood that we would be out of luck if the boat has sold out?

To my knowledge, all of the tour-only Seine River cruises are first come, first served. There are no held seats. If you want to be sure of boarding a 20h00 departure, arrive early.
People are lining up 30 to 45 minutes before the cruise starts. If you want to get 4 places together on top then you need to be lined up timely. In line with your tickets you won't be bumped.
Your wanting 4 people to to take a cruise on a Saturday evening. Unless the weather is awful, it will be busy, it will be crowded. As Janet says, arrive early to board, especially if you want good seats.
For safety reasons, there is a limit to the number of passengers on each boat.
Why not just book timed tickets closer to your date?

I’ll buy tickets with a date and time. I thought open tickets would be nice so we could go “whenever” but that doesn’t sound reasonable for Saturday nights in June.

Good decision. FYI even with the timed tickets, Vedettes du Pont Neuf will let you board a different time if there is room on board for your party.
