We are planning to drive from Mont St Michel to the Loire, then from the Loire to Provence, stopping overnight at Chaspinhac. Can you recommend any scenic routes for us to take? Thanks.

today we drove from the loire ( amboise) to Carnac using the main freeway- generally via Tours, Angers and Nantes. we needed to cover the distance quickly, so did not mind using the freeway. however the scenery was pretty much not worth looking at. just dry flat fields and the odd river crossing etc.
try using google maps and zooming in on a few spots.
hope that helps
The maps shown on ViaMichelin.com when you ask for a suggested routing have scenic roads marked in green.
Years ago we drove from MSM to the Loire. We stuck to the D (district) and N (national) roads, which are well maintained, but can be slow as they go through villages and towns. Get some good regional maps with lots of detail. Using these roads, and stopping to visit a chateau and/or have a picnic, you can expect this to be an all day trip.
Just to echo the other replies, if scenic routes are your priority, you'll need to take the secondary roads and they are much slower than the Autoroute and other main highways.
