Sarlat and Bordeaux

How many days should I allocate to Sarlat and Bordeaux and be able to say I saw everything important?

It really depends on what's of interest to you, but Bordeaux (if you are talking about the entire Bordeaux region) is certainly the more famous location with more sights to see that your friends might consider important when you tell them about it. The city of Bordeaux itself has lots to see, even based on the "quick facts" that pop up when you examine Bordeaux on Google Maps.

Sarlat is more like a hidden gem as far as Americans are concerned, though it is apparently extremely popular with European tourists. Food and wine are among the top attractions.

If you read the Rick Steves guidebook you can get a sense of what there is to see in each of these places and what you would find enjoyable. There are more locations and points of interest around the Dordogne region as well.
