My wife likes to run about 5 miles every morning, are there running or bike trails in Sarlat? We will be there 3 nights.

Most folks on this forum are likely to be spending all day walking/wandering and a 5 mile run to start the day is not usually 'on the agenda'

Yes, there's a greenway (in French, une voie verte) dedicated to bikers, runners, skaters, and pedestrians leaving Sarlat-la-Canéda to the southeast toward Carsac-Aillac. This general map of that voie verte shows the overall layout, though I'd recommend a better map for planning purposes.
One caution: voies vertes are generally paved (the description on the link above indicates this one is), so if that's a problem for your wife, keep that in mind. If it's unpaved paths she's looking for, I would do some Internet searching using the name of the area in which you're interested and the term randonnée (hiking). They're not dedicated running trails, and they often are a mix of paved and unpaved stretches, but maybe you can find something that would be suitable. I would opt for the voie verte myself.
For mapping, my wife and I use the iPhiGéNie app on our smart phones for maps similar to U.S. Geological Survey topographic 1:24,000 maps in the U.S. (though these are slightly smaller scale, at 1:25,000). It's produced and supported by IGN (l'Institut national de l'information géographique et forestière), the French cartographic agency. Very versatile -- you can zoom in so close you can figure out where you are by the shape of the farmhouse or barn you may be near.

I don't think so, but I have to admit I haven't looked for an English translation.
Maybe contact the tourism office at Sarlat-la-Canéda. There are boatloads of British tourists and homeowners in that area, so I suspect the folks at the tourism office would be able to speak English and suggest more detailed maps.
I don't mean to make too big a deal about it, but I know what it's like to be in the middle of nowhere in rural France and not have a clue which direction to go, especially if you're tired or running out of time. Having a good map can be priceless.
