Roussillon Day Trips and Length of Stay?

My wife and I are planning on arriving Roussillon on a Friday around noon via car. Thought is to check out Roussillon in the afternoon and evening and question whether to stay there two or three nights, with resulting one or two days for day trips to surrounding nearby towns and sites. Of note, we are not morning people and it can be mid-morning before we are underway. With that in mind, are there day trips that merit 2 days doing so and what would they include from your experience?

Was there in November 2024 for the day or actually part of the day. Unusual, nice, small but I might choose another town to stay in and visit Roussillon on a day trip.

Depending on where you are coming from/ going to next and what time of year/weather conditions:

North of Roussillon, we enjoyed driving the Gorge de la Nesque circuit, and then a little further north from that, the drive up to the top of Mont Ventoux. We toured Ménerbes and Lacoste one afternoon, though all the little towns there are pretty, small, and enjoyable to walk around. L'Isle sur la Sorgue to the west is a little bigger, and has lots of pretty fountains and water wheels.
