Another great view place is Les Ombres with a view of the Eiffel Tower through the ceiling; we had a birthday meal there years ago.
A less expensive place with wonderful food we just went to was L'Initial with a really great 7 course meal for 48 Euro. It is near the Seine and Notre Dame and afterwards we walked around the Cathedral in the rain before returning to our apartment. Notre Dame at night is my #1 romantic walk in Paris. Even romantic in the rain. We later had drinks with friends in a small square near les Halles (Place St. Opportune) and then walked past the Hotel DeVille at night (just stunning) and then across the Seine to Notre Dame, then across to the left bank and around to the back of Notre Dame (the most lovely view) and then back across to the right bank with lovely views up and down the river. Absolutely wonderful.
Whatever you do a scenic walk in the evening is the way to end the evening before you head back to the hotel. Notre Dame is my top choice but there are other scenic walks including Trocadero with views of the Eiffel Tower sparkling on the hour.
Lots of people enjoy La Calife dinner cruises. Good value for the money, too.
Note that there are three levels of dinner cruises. Some (Bateaux Mouches and Bateaux Parisiens) pre-cook the food and heat it on board. La Calife actually cooks it on board. And Yachts of Paris promises a very deluxe experience - as they should for over €200.
People have enjoyed all of these, but do understand what you're getting before making a decision.
Congratulation! My suggestions are possibly not for your actual big night, but find the Victor Hugo home in Marais. There in the square are two restaurants (Victor Hugo Cafe and another) both were good and the ambience of the area is wonderful. Then rent a citroen tour with private driver for a night time experience around any area of Paris you'd like to go. Very special and so much fun!
If you want a romantic evening dinner - I highly recommend Le Coupe Chou -http://www.lecoupechou.com/ My wife and I ate there a couple of years ago and its quintessential Parisian romance with great food and wine.
I am personally not a fan of dinner cruises. I find them touristy and the food meh (unless you spring for the really expensive ones). A restaurant like Le Coupe Chou lets you come in from the outside and enjoy a romantic respite from the city for a couple of hours.
I second the vote for Le Calife. My husband and I took the dinner cruise June 25 and it was wonderful. The food is excellent and the staff is very professional. The boat has so much ambience. The cruise went slowly enough that we enjoyed both the dinner and the sightseeing. If you take it, ask to sit in the very front section. They will probably say that they can't guarantee it, but it's worth asking and it's just lovely. Check out their website for photos and a look at their menu.
