First timers going to museums in Paris and London. I love Rick's show, books, and talks, but would you recommend the audio tours on his app when available or the audio guides provided by the museums? Specifically the Orsay, British Museum, and St Paul's.

100% the museum audio guides. (I've been on 3 RS tours, so I'm a fan, but museum audio guides are always the way to go, in my opinion.) You could use the RS audio guide as a backup resource info though.
I've used Rick's guides in many cities and museums. I've used it in the Orsay and British Museum.
In general, Rick's audioguides lead you through the highlights of a museum. If you want to be guided through or have more information about the museum's whole collection, then get the museum's audioguide. If you would be happy just seeing a museum's greatest hits and or don't have a lot of time, Rick's are great.
I got hopelessly confused in the Louvre using the RS audio guide because things had moved in the several years since he made it. I wasted time trying to figure out where things were and finally just used the map the museum provided. I'd say bring along the RS audio but also get a museum map and, especially if it's free, the museum's own audioguide. The museum's guide will have a lot more info and it will be up to date. Really depends on whether you want "just the highlights" or to plot your own course.
