We are going to take the train from Paris to Avignon. Our flight gets in at 6 AM so we should have plenty of time Is there a restaurant you would recommend for breakfast prior to boarding the train around noon?
Which train station? There are many… is it gare de Lyon? If so, they’ve got an iconic restaurant right there.
The trains to Avignon do leave from Gare de Lyon but alas, Le Train Bleu doesn't appear to open for breakfast.
I've only grabbed a pastry from one of the vendors as I was leaving so no advice about a sit-down breakfast.
Honestly, there is not a lot of diversity when it comes to breakfast in Parisian cafés. You'll typically have choice between a French-style set coffee+pastry+bread+juice, and a more expensive set that will also include eggs and bacon.
Aux Cadrans, right opposite Gare de Lyon, is very decent for lunch so I assume breakfast there is a good call! Or there are several other cafes next to it.
Le Train Bleu serves breakfast in the Bar area. There is a menu on their website.
At the airport, in terminal 2, the Sheraton ( now a Marriott property) serves a huge buffet breakfast for 25€. They have bag storage.

I believe you would be in Gare de Lyon to go to Avignon - one of six main Paris stations.
Breakfast as we know it, essentially does not exist in France or Italy. They seem to grab something quick and be on their way in the morning.
You need to take some public transport to get from the airport to there anyway so you can easily stop somewhere in the city.
There are some "American" style brunch places in the 10th near Place de Republique - for example, YouTuber Jay Swanson's favorite place :

There are some various bakeries that claim to have the best croissants in Paris, and combined with a cup of coffee, thats probably your best bet, then plan on a sumptuous lunch in Avignon.
By the way, I think Avignon is one of the best places to go for restaurants. I am not sure why that place has so many nice restaurants in a fairly small place that is not super luxurious.
