I am traveling solo next month to Paris and Lille and am looking for restaurants (in Paris’ Latin Quarter specifically but open to all suggestions) where I can eat at the bar. Thanks!!
I have some suggestions for Paris. Pierre Sang restaurant in the Oberkampf springs to mind. It is basically all "bar" seating. Freddy's in the 6th is also pretty much all bar seating. Freddy's is a small plates (tapas) place. L'Avant Comptoir, L'Avant Comptoir de la Mer and L'Avant Comptoir de la Marche are all wine bars with somewhat limited seating, all of it is bar style (and L'Avant Comptoir has the least amount of seating). They also serve small plates and each one has an extraordinary selection of wines and knowledgeable bar staff. I could be wrong but if memory serves me, Semilla has a bar where one can eat a meal. Le Dauphin in the 11th could suit -- bar food is basically it's mission. There is also Korus in the 11th. Sorry, but I don't know any places in the Latin Quarter with good food and good bar seating for meals and you have stated that you are open to all suggestions and some of the places (Korus and Pierre Sang) I mention are worth going across town.
If you'd like to have a go at Lebanese food in Paris, I highly recommend Kubri in the r. Amelot, just next to the Cirque d'Hiver. M:Oberkampf.
We enjoyed it so much last month that we went two nights in a row, sitting at the bar the second night. We watched the kitchen ballet and enjoyed some of the best food I've ever eaten in Paris. I can't wait to go back.
l'Agrume in the 5th has bar seating where you can watch the chef preparing the foods -- haven't eaten there in awhile but it was excellent when we did.
Les Cocottes in the 7th on rue Saint Dominique has bar seating.
FYI, sitting alone at a table is not frowned upon in France like it i ls here.
Here is a fun article on the topic of solo dining in Paris.

It's a bit dated so would check the specific restaurant websites. But still good thoughts.
