Since you are from Chicago, you may want to compare your pizza with theirs: La Pizza Cresci, 34 rue Massena in Nice. Our family has been going there for decades--fourth generation now. It's wood-fired, flat, large, a half is served individually. My husband always gets the eggplant pizza but I've moved on to the salade niçoise, taking just a nibble of his and leaving him the calories. Don't go out of your way for the salad here, just the pizza.
Some restos for Nice... The Crespo-owned restaurants are usually reliable: Bistrot d''Antoine, Comptoir de Marche and the more Italian leaning Bar des Oiseux. For local, traditional La Merenda is the place. All of those are in the old town. In the Carre d'Or, Le Sejour Cafe and Zorzetto. I always recommend a lunch at Le Plongeoir. The food is good but the view is spectacular. Of the beach club restaurants, Le Galet is the best, followed by the Beau Rivage. These are all moderate to slightly above.
For pizza (but more casual), I'm more partial to Les Amoureux or Vabbuo myself, although I've heard of a few others I still need to try. These are more neopolitan style, which I prefer.
