Recommendations for Travelers Insurance

Looking to get something that could be used to cover rescheduling flights and hotel room if we test positive before the trip home.

Medical coverage for covid isn't hard to find. Trip interruption due to covid coverage is much more difficult, but not impossible depending on the country you live in. (US? Canada? UK? Other?) You might start by looking at insurance brokers like square mouth or insuremytrip.

I am traveling in a couple weeks and took out insurance from Allianz which covers trip disruption caused by Covid.

Do some shopping at Squaremouth or Insuremytrip, see all your options.

And remember, insurance is least likely to pay out when you need it the most.

If you're looking at Allianz, please read the policy very carefully. When I bought a policy the last time that France was a Level 4 "do not travel" country, going to an already Level 4 country negated a bunch of coverages in the policy. I cancelled my Allianz policy at the time and switched to USAA which did not similarly remove coverage if you travelled to a country that was already level 4.
Edit: also purchased the USAA "bed rest" option which provides coverage for quarantine above and beyond trip interruption coverage.
